Thanksgiving Meatballs

If you have been following Saturday Dinners With Ang for a while, you now know that the meatball is my motto! LOL! I have countless meatball recipes that I’ve concocted and I can tell you that this baby is at the top of my list of favorites! I had this idea to come up with a meatball for those of you who want to host a great dinner that takes the stress out of roasting a whole turkey. Or, you may be someone who likes to host two dinners. One for your friends, affectionately known as “Friendsgiving” and one for your family. That is A LOT of cooking and hosting. I created this all encompassing meatball to capture all the flavors of Thanksgiving dinner in one bite! I start with ground turkey and stuff it with corn bread stuffing, grated carrot, onion and celery along with those fresh poultry herbs that make Thanksgiving dinner smell so good! The aromas wafting out of the oven as these balls were baking were out of this world! Serve them up with your favorite gravy and all the side dishes that make Thanksgiving dinner so great and ENJOY!

Thanksgiving Meatballs

Ingredients

  • 3 lb 3 Ground Turkey, Dark Meat

  • 12 oz 12 Corn Bread Stuffing with Flavor Mix

  • 3 3 Eggs

  • 2 2 Celery Stalks, diced small

  • 1 1 Carrot Grated

  • 1 1 Small Sweet Onion Grated

  • 1 1 Clam Shell Packet of Poultry Herbs; Rosemary, Thyme and Sage, Minced Fine

Directions

  • To begin, preheat oven to 400. In a bowl, add all ingredients to make meatballs. I crushed half of the bread crumbs and left the other half whole. Add entire seasoning packet from the box to your mix. This is how you will flavor your meatballs
  • Mix well and form into balls using a large cookie scoop. You can make these meatballs any size you would like, but I liked mine on the larger side. Yields 24 meatballs. Bake at 400 for 25 minutes or until the center reads 165.
  • Platter them up with your favorite turkey gravy drizzled over the top and serve! Happy Thanksgiving!

Notes

  • You can use any type of stuffing mix for this recipe, but the cornbread stuffing mix added amazing flavor to these meatballs!
  • Serve these meatballs with my Sage Infused Brown Butter Whipped Potatoes and Cranberry Margarita for the perfect pairing!
  • If you can’t find the clamshell packet of poultry herbs, just use about 1 Tbsp each of Rosemary, Thyme and Sage. You can use dried herbs if you need to, but fresh is always the best! Cut the ratio back to about 1 – 1 1/2 tsp each if using dried.
