Chipotle Whipped Sweet Potatoes

I have the perfect Thanksgiving side dish for your table this year! This recipe is a fun, slightly spicy take on a staple side that we all know and love! I start out by blending chipotle peppers in adobo sauce and mix that with the sweet potatoes along with some maple syrup for a subtle sweetness. These potatoes have the perfect amount of kick to make them the star of your table this year and have everyone asking for the recipe! Chipotle Whipped Sweet Potatoes

Ingredients

  • 2 lb 2 Sweet Potatoes Peeled & Cubed

  • 2 Tbsp 2 Maple Syrup

  • 4 Tbsp 4 Butter

  • 2 2 Chipotle Peppers with 1 Tbsp Adobo Sauce

  • Salt to taste

Directions

  • To begin, peel and cube your sweet potatoes and boil until tender about 12-15 minutes
  • While potatoes are boiling, add chipotle peppers with adobo sauce and a splash of water to your blender and blend until smooth
  • Add your maple syrup, butter and blended chipotle peppers to your mixing bowl and mix until smooth
  • Once your potatoes have reached your desired consistency, place in a serving bowl and DIVE IN!
  • You can serve as is, or add marshmallow cream to the potatoes. I love marshmallow cream with my sweet potatoes at Thanksgiving. Probably because I’m a kid at heart and LOVE anything sweet!
