Caramelized Leek & Boursin Chicken Orzo Bake

Sometimes, my recipes birth from accidents. Like for instance, my instacart shopper bringing me 6 leeks instead of the 2 I requested! LOL! I didn’t want to throw away perfectly good leeks, so I decided to create a recipe that is actually the most perfect recipe for late Summer here in Texas. When we really want fall, but the temps are still consistently in the high 90’s, this skillet bake is just what you need. The flavors are light and bright, while bringing comfort food vibes all at the same time. Orzo is the the perfect bed for the chicken and caramelized leeks, along with fresh tarragon, bringing the most amazing layers of flavor to this skillet bake. This is fancy enough for your weekend date night plans, or it can double as a quick, weeknight dinner when you need something on the table for your family! Serve it up with a nice chilled, white wine and a side salad for a complete meal!
