Chicken Piccata Meatball Orzo Skillet Bake

I think my favorite thing to create is a juicy meatball. There is just something comforting about a good meatball! This skillet bake was absolute perfection and can be something you make for a weeknight dinner, or invite your friends over for a weekend dinner party with this skillet as the star of your table. If you like chicken piccata, you will love these meatballs. I chop capers and fresh parsley, which are the perfect add to the chicken along with parmesan cheese. The orzo takes this dinner over the top and makes this your comfort dinner recipe of the summer! I kicked it up a notch by drizzling an infused garlic herb butter over top after I pulled it out of the oven and that was chefs kiss! Serve with a bright green salad and your favorite bottle of chilled white wine.

Ingredients

  • *For the Meatballs*

  • 1 lb 1 Ground Chicken

  • 1/2 cup 1/2 Grated Parmesan Cheese

  • 1/3 cup 1/3 Bread Crumbs

  • 1 1 Egg

  • 3 Tbsp 3 Chopped Capers

  • 2 Tbsp 2 Chopped Italian Parsley

  • 2 2 Cloves Grated Garlic

  • 1 tsp 1 Salt

  • 1/4 tsp 1/4 Pepper

  • *For the Orzo Bake*

  • 2 Tbsp 2 Butter

  • 1 cup 1 Orzo

  • 2 cups 2 Chicken Bone Broth

  • 1/2 cup 1/2 Grated Parmesan Cheese

  • 1/2 cup 1/2 Heavy Cream

  • 2 Tbsp 2 Capers

  • 2 Tbsp 2 Parsley

  • *For the Finishing Garlic Herb Butter*

  • 1/4 cup 1/4 Butter

  • 3 3 Cloves Garlic

  • 1/4 cup 1/4 Freshly Chopped Italian Parsley

  • *For Searing Meatballs*

  • 1/4 cup 1/4 Flour

  • 1/4 cup 1/4 Olive Oil

Directions

  • To begin, preheat oven to 350. Add all ingredients for meatballs to a large bowl and mix well. Using a small cookie scoop, form balls and toss in flour
  • Preheat oven safe skillet over medium high heat and add about 1/4 cup olive oil. Add meatballs to skillet and sear on all sides, just until meatballs are lightly browned, but not cooked all the way through. Remove meatballs to a plate and prepare orzo
  • To prepare orzo, add butter to the skillet and once melted, add orzo and toast about 2-3 minutes. Add bone broth and once heated through, add grated parmesan cheese and heavy cream. Stir well, add capers and chopped parsley. Place meatballs back into the skillet, cover and bake at 350 for 35 minutes
  • While meatballs are baking, place butter, parsley and garlic in a small sauce pot and melt. Keep on low, stirring occasionally. Once skillet comes out of the oven, drizzle melted garlic butter on top, ladle into bowls and DIVE IN!
