Crispy Dill Pickle Tater Salad

There is a side dish that has become a staple at our table for a quick week night option. Carl has fallen in love with my air fried crispy potatoes with my fat free dilly ranch dip. It’s a really good side dish that is guilt free and incredibly D to the LISH! I wanted to come up with a potato salad version of our weekly favorite side dish and this recipe did NOT disappoint! This is a super healthy and D to the LISH option for those of you who like to indulge in tater salads, but need to steer clear of all the mayo that usually comes with a good potato salad! I use a blend of cottage cheese and greek yogurt to get the most creamy base for these crispy potatoes. The chopped dill pickles are the perfect crunchy addition along with some sweet onions and celery. I love a good crunch in my tater salad and the tang of the dill pickles is PERFECTION! You can thank Carl for that idea because he’s been asking me to develop a potato salad with dill pickles in it. Here it is! And, it’s a healthy choice!

Ingredients

  • 2 lbs 2 Baby Gold Potatoes

  • Toss Potatoes with Olive Oil and Season to Taste with Garlic Powder and S&P

  • *For the Dressing*

  • 1/2 cup 1/2 Fat Free Cottage Cheese

  • 1/2 cup 1/2 Fat Free Greek Yogurt

  • 1 Tbsp 1 Dill Pickle Juice

  • 1/2 tsp 1/2 Dried Dill Weed

  • 1/4 tsp 1/4 Garlic Powder

  • 1/4 tsp 1/4 Salt

  • 1/4 tsp 1/4 Pepper

  • *Remaining Ingredients*

  • 1/2 cup 1/2 Diced Celery

  • 1/2 cup 1/2 Diced Dill Pickles(I use Grillo’s brand)

  • 1/4 cup 1/4 Diced Sweet Onion

  • 1 Tbsp 1 Freshly chopped Dill

  • 2 Tbsp 2 Freshly chopped chives

Directions

  • To begin, slice your potatoes in half and place in a bowl with olive oil, garlic powder and S&P. Toss well. Place in a preheated 400 degree air fryer and air fry for about 16-20 minutes, until crispy and tender. You can roast in an oven if you don’t have an air fryer
  • While potatoes are roasting, in a high powered blender, add all ingredients for dressing and blend until smooth
  • Dice onion, celery and pickles and set aside. Chop dill and chives
  • Once potatoes are done, remove from air fryer and allow to cool for a few minutes. Place in bowl, add dressing, onion, celery, pickles and herbs. Stir well
  • This salad can be served warm or chilled. We ate it chilled and it was D to the LISH!
