Mediterranean White Bean Tuna Salad with Sizzled Caper Vinaigrette

Don’t let the long title scare you into thinking this salad took me a long time to make. I had this beautiful bowl of goodness whipped together in no time! I had just got back home from a trip to Trader Joe’s. If you’ve been following me for awhile, you know that a trip to TJ’s is good for my heart. I was starving while I was putting away the groceries. I honestly had no intention on making a salad for lunch, but as I was putting away the wild arugula, I paused and thought how good it would be to make a tuna salad. I knew I had a can in the pantry with some white beans. I also had some capers and roasted red peppers already opened in the fridge. Carl is always teasing me because our pantry is always stocked full, but I say, you never know when you’ll need something to complete a dish! I was able to whip this salad together with things that I already had from my fridge and pantry. The sizzled caper vinaigrette was perfection and a D to the LISH addition in this salad!

Ingredients

  • 1 1 Can Chunk White Albacore Tuna

  • 7 oz 7 Arugula

  • 10 oz 10 Rinsed & Drained White Beans(Northern or Cannellini)

  • 5 oz 5 Artichoke Hearts from the Jar

  • 4 oz 4 Roasted Red Peppers, Sliced

  • 2 oz 2 Feta Crumbles

  • *For the Sizzled Caper Vinaigrette*

  • 1/3 cup 1/3 Olive Oil

  • 2 Tbsp 2 Caper Juice from Jar

  • 1 1 Clove Grated Garlic

  • 1 tsp 1 Dijon

  • 2 Tbsp 2 Capers

  • S&P to Taste

Directions

  • To begin, preheat a small skillet over medium heat. Add a splash of olive oil and add your capers. Toss capers until they start to brown and sizzle, about 3-5 minutes. Remove from heat. Place all contents for dressing in jar and add capers. Shake well to emulsify. Set aside while you build your salad
  • To build salad, add arugula to a large salad platter or bowl. Toss about 3/4’s of the dressing on the arugula leaves and massage in
  • Add remaining salad ingredients on top and drizzle with the remaining dressing and capers

Notes

  • You can use canned chicken if you prefer that over tuna. Both provide a significant source of good protein.
