Quick & Simple Ceviche

I’m calling this a quick and simple ceviche, because that’s exactly what it is! I love ceviche. If it’s on a menu at a restaurant, I’m definitely ordering it! I find the flavors so fresh with the onions, peppers and lime juice. A traditional ceviche recipe uses raw fish that “cooks” in the acid of the lime juice. Now, if I was going to talk the Big Fella into eating this ceviche, I had to use cooked seafood. Lucky for me, our friends gifted us the best of the best jumbo lump crab that they had shipped in. I opted for that and cooked shrimp for my seafood choices. I added some tomatoes, peppers, onion, cilantro and lime juice. Once I had all the ingredients chopped and mixed together, it was ready to serve. This was the most perfect appetizer for us with the blue corn tortilla chips. This is a great appetizer for your summer parties you have planned! Serve it with a chilled Albariño and you have yourself a perfect pairing for you and your guests!
