Pesto Tortellini Pasta Salad

I have to say, I am incredibly impressed with how easy this salad was to make! It’s only 5 ingredients and takes hardly any time to put together, which makes it the perfect option for your picnic tables this year! I love a good pasta salad on my paper plate in the summer and this one is loaded with bright, fresh flavors! The pesto acts as the base of the salad and coats the tortellini perfectly! I like to add some fresh herbs to brighten it up even more and the roasted red pepper and red onion balance it out with a nice crunch and depth of flavor. Add this recipe to your salad selection this year. It won’t disappoint!

Pesto Tortellini Pasta Salad

Ingredients

  • 1 1 Package Tortellini, cooked to package directions

  • 3 oz 3 Fresh Basil Pesto

  • 1/2 cup 1/2 Sliced Roasted Red Pepper

  • 1/4 cup 1/4 Sliced Red Onion

  • Chopped Italian Parsley and Basil

Directions

  • To begin, boil water for your tortellini and cook to package directions
  • Slice your red peppers and onion
  • Drain your tortellini and place in your serving bowl. Add your pesto while your tortellini is still warm as it helps melt the pesto into the salad
  • Add remaining ingredients and toss. Refrigerate and serve!
