Mediterranean Cheeseburgers

I had this idea for a cheeseburger that featured my favorite Mediterranean flavors and it turned out better than I could have ever imagined! The layers of flavor in this burger paired with all the toppings was out of this world! Beef and lamb are blended with a combination of spices and fresh herbs. Smashed on a griddle and fried to a crisp, then layered with grilled halloumi, tahini aioli, smashed kalamata olives, arugula and pickled red onions. It’s loaded with spice and crunch to make this one of our favorite burgers yet! This one should definitely be on your must try list!

Ingredients

  • *For the Burgers*

  • 1 lb 1 85% Ground Beef

  • 1 lb 1 Ground Lamb

  • 2 tsp 2 Smoked Paprika

  • 1 1/2 tsp 1 1/2 Salt

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1/2 tsp 1/2 Pepper

  • 1/2 tsp 1/2 Cumin

  • 1/4 tsp 1/4 Cinnamon

  • 1/4 tsp 1/4 Cayenne

  • 1 Tbsp 1 Minced, Fresh Dill

  • 1 Tbsp 1 Minced, Fresh Italian Parsley

  • 1 Tbsp 1 Minced, Fresh Oregano

  • 2 tsp 2 Minced, Fresh Mint

  • 1 1 Package Halloumi Cheese

  • 1 1 Package Brioche Burger Buns

  • Arugula, Kalamata Olives & Pickled Red Onions for Garnish

  • *For the Tahini Aioli*

  • 1/2 cup 1/2 Mayonnaise

  • 1/4 cup 1/4 Tahini

  • 1 1 Lemon, Juiced

  • 2 Tbsp 2 Warm Water

  • S&P to Taste

Directions

  • To begin, preheat large flat top griddle or cast iron skillet. Combine ground meat in a large bowl with all spices and herbs. Mix well and form into 3 oz size balls.
  • Mix all ingredients for aioli. Chop about 1/4 cup of kalamata olives and prepare remaining toppings
  • Once grill is ready, place burger balls on grill and smash them down using a parchment square and large spatula to help them get flat. Grill until crispy and flip. Grill until internal temp reaches 160
  • Slice halloumi cheese and place on grill. Grill on each side until you see nice char marks and the cheese is heated through. Throw your buns on the grill and toast them up if you prefer toasted buns
  • To build burgers, slather your tahini aioli on the bottom bun, layer with chopped kalamata olives, arugula, burger, cheese, another burger and pickled red onion. Pop that top bun on and DIVE IN!
