Marry Me Chicken Meatballs

I decided to take the very viral and very yummy chicken recipe and make it into meatballs. You know me and meatballs. I can’t help myself!! I don’t know if I will ever stop trying to come up with a new meatball recipe. They’re so easy and fun! Yes! I said FUN! What’s more fun than a ball of meat! These fellas are full of parmesan cheese and all of the fun Italian spices that you want in a meatball. Baked in the oven for just 18 minutes and they are perfection! This entire meal comes together in 30 minutes or less which makes it the perfect weeknight meal or impress your friend or love and plan it for a date night dinner! Serve with pasta or mashed potatoes and a bright, green salad!

Ingredients

  • *For the Meatballs*

  • 1 lb 1 Ground Chicken

  • 1/4 cup 1/4 Bread Crumb

  • 1/4 cup 1/4 Milk

  • 1/2 cup 1/2 Parmesan Cheese

  • 1 1 Egg

  • 2 Tbsp 2 Freshly Chopped Basil

  • 1 tsp 1 Italian Seasoning

  • 1/2 tsp 1/2 Salt

  • 1/2 tsp 1/2 Pepper

  • 1/2 tsp 1/2 Garlic Powder

  • 1/2 tsp 1/2 Onion Powder

  • *For the Pan Sauce*

  • 2 Tbsp 2 Sun Dried Tomato Oil from Jar

  • 3 3 Cloves Garlic, Minced

  • 1 tsp 1 Dried Thyme

  • 1 tsp 1 Crushed Red Pepper

  • 1/3 cup 1/3 Dry White Wine

  • 3/4 cup 3/4 Chicken Stock

  • 1/2 cup 1/2 Chopped Sun Dried Tomatoes

  • 1/2 cup 1/2 Heavy Cream

  • 1/3 cup 1/3 Grated Parmesan Cheese

  • Fresh Basil for Garnish

Directions

  • To begin, preheat oven to 400. Place all ingredients for meatballs into a large bowl and mix well. Form mixture into balls and place on a parchment lined sheet tray. Bake in the oven for 16-20 minutes until the internal temp reaches 165
  • While meatballs are baking, heat large skillet over medium high heat. Add oil from sun dried tomato jar
  • Add garlic, thyme and red pepper flake. Stir to incorporate and sauté for 1-2 minutes
  • Add white wine and simmer at a low boil for 3 minutes. Stir well, then add chicken stock, sun dried tomatoes, parmesan cheese and heavy cream. Stir well to incorporate
  • Remove meatballs from oven and place in the skillet covering with pan sauce. Top with basil and serve with your favorite pasta or mashed potatoes. It’s time to DIVE IN!
