French Onion Skillet Chicken & Rice

I love a good one pot dinner when I know I have a busy day planned. Having easy recipes to make that taste like you spent way more time on them than you actually did are some of my favorites. This one is the perfect weeknight option but it would also be an amazing choice to entertain with. The rice turns out full of french onion flavor and so tender. The chicken is fall off the bone tender and juicy. Serve this recipe with a nice green salad and you have yourself a complete meal! Enjoy!

Ingredients

  • 6 6 Bone in Skin on Chicken Thighs

  • 2 2 Sweet Onions

  • 1 cup 1 Rice

  • 2 cups 2 Beef Stock

  • 2 tsp 2 Dried Thyme

  • 1/2 tsp 1/2 Garlic Powder

  • S&P to Taste

  • 2 Tbsp 2 Olive Oil

  • 3 Tbsp 3 Butter

Directions

  • To begin, preheat your oven to 400 and season your chicken with a sprinkling of Garlic Powder and S&P
  • Place your skillet on the stove at medium/high heat and add olive oil. Once heated through, add chicken skin side down and sear for 5 minutes without moving.
  • Remove chicken from skillet and place on a plate while you prepare the rice.
  • Add butter to the skillet and add sliced onions and sprinkling of salt and the thyme. Sauté your onions until they begin to caramelize nicely then add your rice. Toss your rice with onions for a couple minutes.
  • Add beef stock and stir well to remove all brown bits off the bottom of skillet. Add chicken back to the skillet skin side up and place the lid on the skillet. Place in oven and bake for 30 minutes.
  • Remove from oven, fluff rice with a fork and plate up! Enjoy!
