Lazy Skillet Lasagna

I don’t even know where to start with this one. It was a slam dunk recipe that I can assure you, will be made on repeat in my kitchen! I really struggled with trying to capture the beauty in this pic because it can sometimes be tough when everything is just thrown in the skillet. However, it doesn’t always have to be about how beautiful it is, but how amazing it tastes and this skillet, checks the easy box and the D to the LISH box! It’s in the 30’s here in Texas at the moment, and this was the perfect skillet of comforting goodness for these cold days we’re experiencing. I love a pan of lasagna, but the effort to make it can sometimes be a bit much. I save lasagna for holidays and special occasions. This recipe makes it easy to enjoy lasagna any day of the week with minimal effort. Just a few simple ingredients is all it takes to make it and you’ll be diving in before you know it! Ingredients

  • 2 Tbsp 2 Olive Oil

  • 1 1 White Onion Diced

  • 2 lb 2 Lean Ground Beef or Turkey

  • 3 3 Cloves Minced Garlic

  • 2 2 24 oz Jars of Rao’s Marinara(or marinara of choice)

  • 2 tsp 2 Italian Seasoning

  • Pinch of Cinnamon(Optional, but really adds depth of flavor to your sauce)

  • 10 10 No Boil Lasagna Noodles

  • 16 oz 16 Whole Milk Ricotta

  • 1/2 cup 1/2 Parmesan Cheese

  • 2 Tbsp 2 Minced Fresh Parley

  • S&P to Taste

Directions

  • To begin, heat olive oil in a large skillet over medium/high heat and add your diced onion. Sauté until translucent
  • Add your ground meat and season with S&P. Brown meat and once cooked through, add minced garlic and mix well
  • Add marinara, Italian seasoning and cinnamon. Stir to combine. Turn stove to medium/low
  • Break up the lasagna noodles and place them in the skillet ensuring they are all covered with the sauce
  • In a small bowl, add ricotta, parmesan cheese and minced parsley. Stir well to combine. Spoon dollops of ricotta cheese mixture on top of lasagna. Place lid on skillet and keep on low bubble for about 35-40 minutes until your noodles are tender and cooked through.
  • Ladle in bowls and serve with some garlic bread and a green salad. Don’t be surprised if people go for seconds! It’s worthy of a refill!

Notes

  • If you prefer basil, you can mix that with the ricotta also. That would be just as good! You can also leave the herbs out all together, but I find it adds a pop of freshness that really adds to the dish.
