Biscoff Cookie Butter Granola

I have American Airlines to thank for my new cookie obsession. For those of you who don’t know, the Biscoff cookie is AA’s official cookie of the sky! Every time I’m crunching on one at 35,000 feet, I think about all the ways I could transform this beauty into a D to the LISH treat! Biscoff knows how good their cookies are, so they added to their collection and made a cookie butter that I am obsessed with! I thought it would be amazing in granola and I was right! This granola is soooo good! You can eat it plain, with yogurt, as a cereal or over ice cream! There isn’t a wrong way to indulge in this crunchy goodness. This makes a perfect hostess gift or homemade gift for your bestie! I made a biscoff raspberry yogurt parfait and it was decadent! A perfect way to get that extra protein we need with a crunch of yum! Make a batch of this granola today and don’t blame me if you can’t keep your hands out of it!

Biscoff Cookie Butter Granola

Ingredients

  • 3 cups 3 Rolled Oats

  • 1/2 cup 1/2 Sliced Almonds

  • 1/2 cup 1/2 Chopped Pistachios

  • 1/2 cup 1/2 Chopped Walnuts

  • 1/2 tsp 1/2 Salt

  • 1/2 tsp 1/2 Cinnamon

  • 1/3 cup 1/3 Biscoff Cookie Butter

  • 1/3 cup 1/3 Pure Maple Syrup

  • 1/4 cup 1/4 Coconut Oil

  • 1 tsp 1 Vanilla

  • 1/2 cup 1/2 Mini Cinnamon Chips

Directions

  • To begin, preheat oven to 325. In a large bowl, add oats, chopped nuts, salt and cinnamon. Mix well
  • In a microwave safe bowl, add coconut oil, maple syrup, biscoff cookie butter and vanilla. Microwave for 30 seconds to melt the oil and soften the cookie butter. Whisk well until all is combined and pour over granola mixture. Stir and coat well
  • Place parchment paper on a large sheet pan and empty contents of bowl onto sheet pan. Spread out and bake for 30 minutes, tossing at 15 minutes
  • Remove from oven and allow to cool for 5 minutes. Sprinkle mini cinnamon chips all over granola and let sit until granola is cooled. Toss all together and store in an airtight container for up to 2 weeks
  • To make the Biscoff banana yogurt parfait, layer vanilla yogurt with biscoff granola and banana slices. Top with a drizzle of honey and DIVE IN!
