Chipotle Sweet Potato Turkey Burgers

Listen! Yes, I’m starting out this post by saying listen. I know you may be thinking, sweet potato? In a burger? I’m here to tell you that this was a winner of a burger! This is a low calorie option and high in protein. Focused on low carb? Just remove the bun! It’s a great burger to eat with a fork. I did and it was perfect! It’s loaded with so much flavor with the chipotle peppers and is so satiating with the addition of the sweet potato and black beans. The flavor in the sweet potato plays off the spicy peppers so well and paired perfectly with the pepper jack cheese and dollops of guacamole. This is a burger that will be on repeat in my kitchen!

Ingredients

  • *For the Burgers*

  • 1 lb 1 Ground Turkey

  • 1 1 Medium Sweet Potato

  • 1 cup 1 Black Beans, Rinsed and Drained

  • 2 Tbsp 2 Freshly Chopped Cilantro

  • 2 2 Chipotle Peppers in Adobo + 1 Tbsp Adobo Sauce

  • 1 tsp 1 Southwest Burger Seasoning *See Notes*

  • *Burger Toppers*

  • Pickled Red Onions*See Notes*

  • Guacamole *See Notes*

  • 6 6 Slices of Pepper Jack Cheese

  • 6 6 Hamburger Buns

  • Lettuce and Tomato

Directions

  • To begin, in a mixing bowl, add ground turkey, rinsed and drained black beans and cooked, mashed sweet potato(You can microwave your sweet potato by poking holes with a knife or fork and wrapping in paper towel or you can dice it and boil it, roast it, however you want to cook it. Once cooked, peel and add to your mixing bowl)
  • In a high powered blender, blend your chipotle peppers and adobo sauce together. Add to mixing bowl with other ingredients
  • Finely chop cilantro and add to mixing bowl along with 1 tsp of southwest burger seasoning
  • Mix everything together and form into 6 burger patties
  • Add 2 Tbsp Avocado or Olive oil to skillet and pan fry burgers about 5-7 minutes per side on medium high heat until cooked through at 165. Once burgers are almost cooked through, add cheese slices on top and place lid on skillet to melt your cheese
  • To build burgers, place lettuce and tomato on bottom bun, add burger patty, top with guacamole and pickled red onion. It’s time to DIVE IN!

Notes

  • For the Southwest Burger Seasoning, combine 2 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, 1 tsp salt and 1/2 tsp pepper. Stir well and measure out 1 tsp for your burgers. Save the remaining seasoning for anything you would like to season. This pairs well with pork, poultry and fish.
  • For the Pickled Red Onions, slice one large or two small red onions. Place in container with 1/2 cup apple cider vinegar, 1/2 cup water, 2 Tbsp sugar and 1 tsp salt. Shake well and keep refrigerated for up to two weeks. Pickled red onions provide a yummy pickled crunch to top on so many things.
  • Giddy-up Guacamole with Baked Tajin Tortilla Chips, You can use store bought guacamole, or you can make my guacamole recipe which would be tremendous topped on these burgers. Click the link for the recipe.
