Giddy-up Guacamole with Baked Tajin Tortilla Chips

I am at my happiest when I have warm tortilla chips and guacamole in front of me. I created this guacamole recipe during the Covid shutdown when all we were doing was eating. LOL! At home happy hours were all the rage back then and this guacamole was the star of the table! I love how simple this guac is to make. I like a chunkier style guac so the red onion and jalapeños get to take center stage in this slightly spicy dip! The Tajin is the perfect seasoning for the corn tortillas and baking them is a healthier way to obtain that crunch we all love! Add this to your list of must try’s and enjoy with your favorite margarita!

Ingredients

  • *For the Tortilla Chips*

  • 8 8 White Corn Tortillas

  • 3 Tbsp 3 Olive Oil

  • Juice of 1/2 a Lime

  • Tajin to taste

  • *For the Guacamole*

  • 3 3 Large, Ripe Avocados

  • 1/2 cup 1/2 Small Diced Red Onion

  • 1/4-1/3 cup 1/4-1/3 Small Diced Jalapeños

  • 1 1 Lime, Freshly Juiced

  • 2 Tbsp 2 Cilantro Chopped

  • Strong Pinch of Salt to taste

Directions

  • To begin, preheat oven to 375. Brush 1 Tbsp of olive oil on baking sheet. Mix 2 Tbsp of olive oil and 1/2 a fresh squeezed lime together. Brush oil and lime mixture on each tortilla, stacking as you go. Cut tortillas into triangles and spread out on baking sheet. Sprinkle with Tajin and bake for 12-15 minutes
  • While tortilla chips are baking, prepare guacamole by finely dicing red onion and jalapeño. You control the heat of this guacamole by keeping the seeds in or removing them. I personally LOVE the heat that the seeds bring, so I opt to keep them in!
  • Split open your avocado and remove pits. Place avocado in medium bowl. Add lime juice and salt. Mash avocado and add red onion, jalapeño and chopped cilantro. Mix together and enjoy with your warm Tajin tortilla chips!

Notes

  • I recommend a guacamole keeper to store any leftover guac you have. The airtight lid keeps the guac from turning brown and extends the life of your yummy dip! You can find them on Amazon
  • Taste as you go while you’re making this. You may want to add more lime or more salt. You may want less jalapeño or less onion. Make it your own to your taste preference.
  • I would recommend making two batches of chips if you are entertaining a group of people.
