Winter Greens Salad

I love all the yummy veggies in season during the winter months. The vibrant green kale leaves made the perfect bed for this power greens salad. There are so many nutrients in this bowl starting with the kale, then pairing the roasted sweet potato and avocado to provide those healthy fats we all need in our diet. I love the crunch the pepitas bring with the help of that sweet pop of goodness from the pomegranate seeds. The lemon parm vinaigrette takes the flavor in this salad over the top! You can easily add a protein to this salad to make it a complete meal. Salmon or chicken would be great options. Enjoy!

Ingredients

  • 1 1 Medium Sweet Potato

  • 1 Tbsp 1 Olive Oil

  • S&P and Garlic Powder to taste

  • 1 1 Bunch of Lacinato Kale

  • 1 1 Large Avocado

  • 1/4 cup 1/4 Pepitas(Pumpkin Seeds)

  • 1/4 cup 1/4 Pomegranate Seeds

  • *For the Dressing*

  • 1/2 cup 1/2 Olive Oil

  • 1/4 cup 1/4 Freshly Grated Parmesan Cheese

  • 1 1 Lemon Juiced

  • 1 1 Clove of Garlic

  • 1 tsp 1 Honey

  • S&P to taste

Directions

  • To begin, preheat your oven to 425. Peel and cube your sweet potato into small cubes. Spray or brush about 1 Tbsp of olive oil on your potatoes and season with S&P and a sprinkle of garlic powder
  • Roast your potatoes for 25 minutes
  • While potatoes are roasting, wash and chop your kale. Cube your avocado and measure out your pepitas and pomegranate seeds
  • In a blender, add all ingredients for the dressing and blend until smooth. Toss about 1/4 cup of the dressing onto your greens
  • Add sweet potato, avocado, pepitas and pomegranate seeds to your kale
  • Toss to combine and DIVE IN!
