Three Bean Turkey Vegetable Soup

I haven’t met a soup I didn’t like! They are so versatile and healthy. I love throwing an easy soup together on a chilly day to warm myself up or for meal prep. There’s nothing like the feeling of having your lunch already prepared for you for the week to take the stress off that “one more thing” on your to do list! This is the perfect soup for whatever goal you have, whether it’s healthy eating or getting ahead with meal prep. Maybe you’re like me and don’t even need an excuse! You just love soup! Welcome to the club! I chose the Instant Pot as my vessel to prepare this D to the LISH pot of goodness in because it’s the best choice when you want it quick! You can sauté your meat and veggies right in the pot and then add the remaining ingredients before you pressure for only 5 minutes! You can easily make this on the stove top as well. Just simmer with the lid on for 30 minutes before enjoying. Pair with a nice sourdough roll and some butter! Yum!

Ingredients

  • 1 lb 1 98% Fat Free Ground Turkey

  • 28 oz 28 Crushed Tomatoes

  • 32 oz 32 Beef Stock

  • 1 1 Yellow Onion Chopped

  • 2 2 Carrots Grated

  • 2 2 Celery Stalks Sliced

  • 15 oz 15 Green Beans

  • 15 oz 15 Kidney Beans

  • 15 oz 15 Cannellini Beans

  • 1 Tbsp 1 Olive Oil

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Pepper

  • 1 tsp 1 Dried Oregano

  • 1 tsp 1 Dried Basil

  • 1 tsp 1 Dried Parsley

Directions

  • To begin, preheat instant pot on sauté and sauté onion, carrot and celery with olive oil
  • Season with S&P and Parsley, Basil and Oregano
  • Add ground turkey or ground meat of choice and combine with veggies and herbs.
  • One turkey is browned, add crushed tomatoes, and beans to the pot
  • Add stock and stir well. Place lid on and set IP for 5 minutes using a quick pressure release
  • Ladle in bowls and enjoy with crackers and rolls!
