Mediterranean Charred Broccolini & Roasted Red Pepper Frittata

I love a super easy and D to the LISH brunch idea and this fella does not disappoint in either way! This is the perfect option for when you need to throw something together for that brunch you have to host or your next book club gathering. There are very few steps to putting this frittata together which makes it the perfect option any day of the week. It’s also very versatile as you can swap out the veggies and add any of your favorites to the skillet. I love the way the charred broccolini pairs with the roasted red pepper and the saltiness of the feta. The fresh dill adds a nice pop of freshness at the end that compliments the dish. Serve this up with a bright, green salad and some lattes. It’s a recipe you’ll be putting on repeat!

Ingredients

  • 2 Tbsp 2 Olive Oil

  • 5 oz 5 Broccolini

  • 1/4 tsp 1/4 Red Pepper Flake

  • S&P to taste

  • 6 6 Eggs

  • 1/2 cup 1/2 Half & Half or Whole Milk

  • 1/4 cup 1/4 Roasted Red Pepper

  • 1/4 cup 1/4 Feta Crumbles

  • 1 Tbsp 1 Fresh Dill

Directions

  • To begin, preheat oven to 350. Add olive oil to your 10″ skillet and heat through. Add broccolini, S&P and red pepper flake
  • Toss broccolini in oil and seasonings. Pan sear until charred
  • Whisk eggs and milk together. Season with S&P to taste. Pour egg mixture over broccolini in skillet. Turn off heat
  • Add sliced roasted red pepper, crumbled feta and dill. Bake for 25 minutes until cooked through
  • Remove from oven and slice. Serve with extra herbs and feta. Enjoy with a nice salad and scones
