Mediterranean Crispy Lemon Parmesan Smashed Taters

I absolutely LOVED the way this easy side dish came together! This is the perfect choice for those busy weeknights or when you’re building that fun menu for your weekend dinner plans with your pals! The parmesan with the bright lemon and fresh dill is the perfect combination, paired with a nice side of homemade tzatziki sauce! Just a quick par boil, smash and pop in the oven and these beauties will be on your table in no time! Once you try them, you’ll be making on repeat, I promise!

Mediterranean Crispy Lemon Parmesan Smashed Taters

Ingredients

  • 24 oz 24 Baby Gold Potatoes

  • 1/2 cup 1/2 Grated Parmesan Cheese

  • 1/4 cup 1/4 Olive Oil

  • 1 Tbsp 1 Fresh Dill

  • 1 1 Lemon, half juiced on finished taters and cut into wedges for serving

Directions

  • To begin, preheat oven to 425 and parboil your potatoes. While potatoes are boiling, whisk together your oil and parmesan
  • Brush your parm mixture onto parchment lined sheet tray
  • Sprinkle fresh dill onto parm mixture
  • Place your potatoes onto sheet tray and smash using a meat mallet or a heavy bottom glass
  • Roast potatoes at 425 for 20-25 minutes until crispy. Remove to serving plate, squeeze with lemon and garnish with dill. Serve with tzatziki sauce

Notes

  • Ang’s Homemade Tzatziki Sauce recipe: 3/4-1 cup Nonfat greek yogurt, 1 lemon zested and the juice of 1/2 the lemon, 2 mini cucumbers grated on box grater and squeezed, 2 cloves of minced garlic, S&P to taste.
