Busy Day Slow Cooker Chicken

Do you ever have those days where you just know you’re not going to have time to make dinner when you get home? You want something tasty and comforting but you just don’t have the time or energy to put a full meal on the table? I had one of those days myself today with back to back meetings all day. I knew I wouldn’t be able to finish work and have enough energy to cook a full meal. I decided to lean on my slow cooker today for some help in the kitchen and it didn’t disappoint. All it took was some veggies and a plump chicken in the pot for 8 hours to get the juiciest, fall apart, most tender chicken ever! Add it to your recipe box when you need an answer for your next busy day!

Busy Day Slow Cooker Chicken

Ingredients

  • 1 5-6 lb 1 Whole Chicken

  • 3 3 Carrots

  • 3 3 Celery Stalks

  • 1 1 Yellow Onion

  • 1 1 Bunch of Thyme

  • 1-2 cups 1-2 Chicken Stock

  • Season with S&P, Garlic Powder & Paprika

  • 3-4 3-4 Whole Garlic Cloves for the Cavity

  • 1 1 Lemon Cut in Half for the Cavity

Directions

  • To begin, add chopped veggies to the bottom of your slow cooker. Tie your bunch of thyme with kitchen twine and toss on top
  • Add garlic cloves and lemon halves in the cavity of your chicken to add additional flavor
  • Season your chicken with S&P, Garlic Powder and Paprika
  • Add 1-2 cups of chicken stock to the bottom of your pot. Set your slow cooker on low for 8 hours or high for 5
  • Remove lid after 8 hours and remove chicken to platter
  • Make a vegetable gravy using an immersion blender or a high powered blender by blending your veggies into your broth to create a thickening and additional flavor that pairs perfectly with your chicken and some mashed potatoes or rice
  • Enjoy with your favorite veggie and DIVE IN!

Notes

  • The lemons added such an amazing flavor in this chicken. I added them to the platter and squeezed some more juice on my chicken. So Yum!!
