Crispy Chicken Sandwich with Hot Honey & Curried Slaw

I will never forget where I was when I sank my teeth into this D to the LISH chicken sandwich. Carl and I were up in Traverse City visiting Mama Joan and we went to a fun place called “Rare Bird” for dinner. Once I saw this sandwich on the menu, it was safe to stop hunting for my dinner because there it was! The flavor of the fried chicken sandwich with the honey and curried slaw was pure perfection and I immediately began spinning my wheels with how to recreate this masterpiece of a sandwich. I wanted to make it a touch healthier, so I went with the air fry option for these chicken sandwiches and they turned out wonderful! A little drizzle of my favorite hot honey from Trader Joe’s and a plop of curried slaw on top and I was transported right back to that first bite experience this past Summer. It’s an easy recipe to make and I encourage you to give this fella a try! You’ll be making it on repeat!

Ingredients

  • *For the Crispy Chicken Sandwich*

  • 1 lb 1 Boneless Skinless Chicken Breast or Thighs

  • 1 1 Egg

  • 1/2 cup 1/2 Flour

  • 1/4 cup 1/4 Corn Starch

  • 1/2 tsp 1/2 Salt

  • 1/2 tsp 1/2 Garlic Powder

  • 1/2 tsp 1/2 Onion Powder

  • 1/2 tsp 1/2 Paprika

  • 1/4 tsp 1/4 Cayenne

  • *For the Curried Slaw*

  • 14 oz 14 Bagged Cole Slaw Mix

  • 1/2 cup 1/2 Mayonnaise

  • 1 Tbsp 1 Curry Powder

  • 1/2 1/2 Large Lime Juiced

  • 1-2 tsp 1-2 Agave

  • *To Build the Sandwich*

  • 1 Tbsp 1 Hot Honey

  • 4 4 Brioche Buns

Directions

  • To begin, place your slaw mix in your bowl. Mix your curry powder and mayo. Add to your slaw mix
  • Juice your lime and add your agave
  • Mix together until blended well. Cover and chill until you’re ready to build your sandwiches
  • To begin prepping to air fry your chicken, combine flour, corn starch and all seasonings together in a bowl. Whisk until incorporated. Whisk egg in a separate bowl
  • If using chicken breasts, cut in half after pounding them. Season with a little S&P and dredge in seasoned flour mixture first, followed by egg and back in the flour
  • Preheat air fryer to 400, spray your coated chicken with olive oil or avocado oil spray. Air fry for 8 minutes, flip and spray any dry spots. Air fry on second side for 6 minutes until chicken is cooked through
  • To build sandwiches, place chicken on bottom bun, drizzle with hot honey and place a scoop of curried slaw on top
  • It’s time to dive into these D to the LISH sammies!
