One Pot Italian Chicken

Are you ever too busy to think about what’s for dinner? I have the perfect one pot meal option for you when you’re stuck on what to make but want to have a flavor packed dinner with minimal effort! I used my trusty sous vide to ensure a perfect, juicy piece of chicken but you can pan sear your chicken if you don’t have a sous vide. The creamy lemon parmesan orzo paired with spinach and sun dried tomatoes is an excellent base for your chicken to nestle in and the goat cheese crumbles add the perfect finishing touch for that extra layer of flavor. Pair this with a nice chilled glass of your favorite white wine and DIVE IN!

  • Add orzo and toast for a couple minutes
  • Add chicken stock, the zest and juice of one lemon. Add sun dried tomatoes. Bring to low boil and cover for about 10 minutes until orzo is just tender
  • Add parmesan cheese and heavy cream
  • Wilt in spinach
  • Nestle chicken back in the pan and top with goat cheese crumbles. ENJOY!
