Mom’s Hungarian Goulash

Do you have a favorite childhood dinner? Like that one dinner that you still crave to this day? Well, allow me to introduce you to MY favorite dinner growing up! This is Mom’s Hungarian Goulash. My Mom made some stellar things in the kitchen when I was a kid but this dinner TOPS THEM ALL!! This is a warm hug in a bowl and perfect for these cold winter days. It’s tender chunks of beef swimming in an amazing sauce that’s perfectly sweet with a hint of spice on top of egg noodles! What’s not to love about this one pot wonder?! I make it in the Instant Pot so it’s the perfect choice for a busy weeknight or those nights where you don’t want to put a ton of effort into dinner. You can make this in a skillet or your slow cooker as well. Serve with a nice green salad and a fun Aussie Shiraz or Zinfandel and enjoy!

Ingredients

  • 3 Tbsp 3 Butter

  • 1.5 lb 1.5 Beef Stew Meat

  • 1 1 Yellow Onion

  • *For the Sauce*

  • 1/2 cup 1/2 Ketchup

  • 2 Tbsp 2 Worcestershire Sauce

  • 1 Tbsp 1 Brown Sugar

  • 2 tsp 2 Sweet or Hot Hungarian Paprika

  • 1/2 tsp 1/2 Ground Mustard

  • 1 cup 1 Water

  • 12-16 oz 12-16 Egg Noodles

  • 1 Tbsp 1 Cornstarch or Arrowroot Starch + 2 Tbsp Water

Directions

  • To begin, set your Instant Pot to sauté and add butter. Slice your onion and sauté until translucent. Add beef cubes and season with S&P. Sauté until browned
  • Mix together all ingredients for sauce and add to Instant Pot. Stir well. Turn off sauté setting and place lid on. Set Instant Pot to 15 minutes. Once it’s done, allow it to natural pressure release.
  • While it’s releasing pressure, add 1 Tbsp cornstarch or arrowroot starch with 2 Tbsp of water and shake well. Remove lid from IP and set to sauté setting again. Add starch slurry and bring mixture to bubble. Once it has thickened to your liking, remove from heat and serve on top of noodles.
  • ENJOY!!

Notes

  • If you don’t like heat, use sweet Hungarian Paprika.
