Roasted Radish & Lemon Cod

Some of my favorite meals are those that are so incredibly easy to throw together and are loaded with flavor! I couldn’t believe how quick this dinner was to make and how healthy it is. This is a must try on your busiest weeknight when you don’t have the time to spend in the kitchen but want something D to the LISH on the table fast! I started with a plank of Cod and just seasoned with olive oil, dill, S&P and lemon zest and juice. I sliced some radishes in half and seasoned with olive oil and S&P. If you’ve never tried roasted radishes, it’s time for you to give them a try. Radishes are a great source of antioxidants and are high in potassium which can help lower blood pressure. So, save this dinner for when you’ve had a stressful day! LOL. Pair it with some rice or your favorite side dish and a nice glass of chilled white wine. ENJOY!

Ingredients

  • 1 lb 1 Cod

  • 1 1 Package Radishes

  • 1 1 Lemon Zested & Juiced

  • 1 Tbsp 1 Olive Oil

  • 1/2 tsp 1/2 Dried Dill

  • S&P to taste

Directions

  • To begin, brush 2 tsp of olive oil on cod
  • Season with dill and S&P
  • Slice your radishes and brush 2 tsp of olive oil on them along with S&P to taste
  • Zest and juice your lemon on the fish and radishes
  • Place in a 450 degree oven for 10-12 minutes until fish is cooked through and radishes are roasted to your liking
  • Plate up and garnish with parley. DIVE IN!
