Gluten Free Sugar Free Oatmeal Chocolate Candy Cookies

I love a good cookie! In a perfect world, I’d be able to eat all the cookies I wanted and never gain a pound. Well, we all know this world is far from perfect and as much as I’d love to eat all the cookies I wanted and never gain any weight, that will never happen! I wanted to come up with a cookie that was a healthier version of some of my favorite cookies. I used gluten free flour, swerve sugar free brown sugar, applesauce and sugar free chocolate candies as my healthy options for this cookie. It’s only 2pts per cookie for my weight watchers enthusiasts. It’s nice to partake in a sweet, healthier version to satisfy my sweet tooth. Try a batch and let me know what you think!

Ingredients

  • 2 1/4 cups 2 1/4 King Arthur Measure for Measure Gluten Free Flour

  • 1 1/2 cups 1 1/2 Swerve Sugar Free Substitute Brown Sugar

  • 2 2 Eggs

  • 1 cup 1 Unsweetened Apple Sauce

  • 1 tsp 1 Vanilla

  • 1 tsp 1 Baking Soda

  • 1/2 tsp 1/2 Baking Powder

  • 1 tsp 1 Salt

  • 2 cups 2 Rolled Oats

  • 2 cups 2 Russel Stover Sugar Free Chocolate Coated Candies

Directions

  • To begin, mix all dry ingredients together, flour, baking soda, baking powder and salt
  • Mix applesauce, eggs, brown sugar substitute and vanilla together. Add dry ingredients to wet ingredients and mix well
  • Add oats and chocolate candies. Stir to combine
  • Drop 1-2 Tbsp of cookie dough onto parchment lined baking sheet and bake in a 375 degree oven for 11-13 minutes until baked through. If you don’t have parchment paper, you can use cooking spray. Allow to cool and enjoy!

Notes

  • I had to order the Russell Stover candies from their website as they’re harder to find in your local grocery store. You can sub Lily’s sugar free chocolate chips if you can’t find the chocolate coated sugar free candies.
