Chili Lime Pistachio Crusted Salmon

This quick little recipe birthed from a happy accident! How many of you have been victim to the Instacart kerfuffle where you don’t get an item you ordered but are gifted with something totally random that you know you didn’t select? Yeah, that’s happened to me a few times. Sometimes, I get frustrated, because I end up with things I clearly don’t need, but then there are the “Happy Accidents” as I like to call them. When I see a bag of Little Debbie powdered donuts peeking out and I think to myself, “Well, I don’t need these” and then I promptly open the bag and eat them! LOL! That’s what happened with this bag of chili roasted pistachios. We opened them and began to partake in the tasty snack and instantly fell in chili pistachio love! How could something be this good?! Within a few minutes, my wheels were spinning with what I could do with these fellas. If Carl had his way, eating them out of the bag would’ve been enough, but I always have to step it up a peg, so I created this easy salmon recipe to really show off these glorious little nuts! I can tell you, we will be placing orders for this crunchy little snack ON PURPOSE moving forward!

Chili Lime Pistachio Crusted Salmon

Ingredients

  • 1 lb 1 Salmon

  • 1/3 cup 1/3 Chili Roasted Pistachios

  • 2 Tbsp 2 Honey

  • 2 Tbsp 2 Fresh Squeezed Lime Juice

  • 1 Tbsp 1 Olive Oil

  • 1 1 Clove Minced Garlic

  • S&P to Taste

Directions

  • To begin, measure out your pistachios and rough chop them
  • In a prep bowl, measure out your honey, olive oil, lime juice and garlic
  • Whisk all together, season salmon with salt and pepper, pour 1/2 of your mixture on salmon and brush in
  • Mix chopped pistachios in remaining mixture and press into salmon. Oven roast at 400 for 20 minutes
  • Serve salmon with avocado and additional lime wedges

Notes

  • Pair this yummy dinner with a nice, chilled glass of New Zealand Sauvignon Blanc

    I grabbed a bag of chili lime tajin pistachios at Costco and opened the bag on the way home to snack on! I immediately thought that is would. E delicious on fish! I looked up recipes and yours popped up! I’m going to try this tonight! Question… where does the olive oil come in? I see in ingredients but not in recipe. Does it just go on the pan?

      Thank you soo much for sending me a message! I have edited the recipe and am so sorry that was missed. Add the olive oil with the honey, lime juice and garlic. Whisk all together and brush half on your seasoned S&P salmon pieces. Then, mix in your chopped nuts with the remaining mixture and top on your salmon. Appreciate you bringing this to my attention.
