Broccoli Cheddar Skillet Mac n Cheese

If you love broccoli cheese soup as much as I do, then you will love the flavors in this easy, one pot skillet meal. A simple medley of spices adds a nice depth of flavor and compliments the richness of the cheese and fresh broccoli in this mac dish. You can use your favorite short cut pasta but I prefer elbows as they cook up quickly. It only takes a few ingredients to make this cheesy skillet. It’s the perfect potluck dish or that weeknight option for when you need something on the table fast!

Ingredients

  • 16 oz 16 Elbow Macaroni

  • 12 oz 12 Broccoli Florets

  • 2 Tbsp 2 Olive Oil

  • 1 1 Shallot

  • 2 2 Carrots Grated

  • 2 Tbsp 2 Butter

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Paprika

  • 1/2 tsp 1/2 Cayenne

  • 1/2 tsp 1/2 Salt

  • 1/4 tsp 1/4 Pepper

  • 2 Tbsp 2 Fresh Thyme

  • 2-3 cups 2-3 Chicken Stock

  • 1 1/2 cups 1 1/2 Whole Milk

  • 2 cups 2 Shredded Cheddar Cheese

  • 1/4 cup 1/4 Grated Parmesan Cheese

Directions

  • To begin, preheat oven to 400
  • In a skillet, add olive oil and sauté diced shallot until translucent. Add grated carrot and sauté until tender
  • Add butter, spices and thyme. Mix together until combined and add chicken stock and milk. Bring to low boil
  • Add macaroni and broccoli . Stir well and place lid on skillet. Steam broccoli and cook macaroni until al dente about 6-8 minutes.
  • Remove lid and add 1 1/2 cups grated cheddar cheese and parmesan cheese. Mix well. Top skillet with remaining cheese and bake in oven for 20 minutes.

Notes

  • This skillet mac n cheese is on the spicier side. If you wanted to cut back the spice, reduce your cayenne to 1/4 tsp or omit completely.
