Sticky Chicken Meatballs with Asian Broccoli Slaw

I love meatballs! Like, I don’t know if there is another food I like more. Meatballs are so versatile! There are so many things we can do with them, and I promise you, I will do my best to show you all the ways to make a meatball! I may need to have a section on the blog dedicated just for it! LOL! I developed a super yummy sticky asian sauce for some ribs I did awhile back and I had leftover sauce that I needed to use up. I thought these meatballs would be perfect with that sauce and boy, was I right! I love being right….šŸ˜‰ I baked these beauties and then pan seared them with the sauce. While they were baking, I whipped up a crispy and bright broccoli slaw salad as the bed for these meatballs. It was the perfect meal! Sooo easy and full of so many amazing flavors! Ingredients

  • *For the meatballs*

  • 1 lb 1 Ground Chicken

  • 2 Tbsp 2 Soy Sauce

  • 2 2 Cloves Minced Garlic

  • 1 Tbsp 1 Minced Green Onion

  • 1 tsp 1 Minced Ginger or Ginger Paste

  • 1 tsp 1 Pure Sesame Oil

  • *For the Sticky Sauce*

  • 3/4 cup 3/4 Soy Sauce

  • 1/4 cup 1/4 Water

  • 1 cup 1 Light Brown Sugar

  • 1/4 cup 1/4 Mirin

  • 2 Tbsp 2 Pure Sesame Oil

  • 1 Tbsp 1 Rice Wine Vinegar

  • 1 Tbsp 1 Ginger Paste or Grated Ginger

  • 2 tsp 2 Sriracha Sauce

  • 4 4 Cloves Grated Garlic

  • 1 1 Scallion minced

  • 1/2 tsp 1/2 Red Pepper Flake

  • 1/4 tsp 1/4 Black Pepper

  • 3 Tbsp 3 Corn Starch + 3 Tbsp Water for Slurry

  • *For the Broccoli Slaw*

  • 1 1 Bag of Broccoli Slaw

  • 1 1 Red Pepper cut into thin strips

  • 1 1 JalapeƱo cut into thin strips

  • 1 Tbsp 1 Thai Basil Chopped

  • 1 Tbsp 1 Fresh Mint Chopped

  • 2 Tbsp 2 Fresh Cilantro Chopped

  • *For the Slaw Dressing*

  • 1/4 cup 1/4 Rice Wine Vinegar

  • 3 Tbsp 3 Creamy Peanut Butter

  • 2 Tbsp 2 Soy Sauce

  • 2 Tbsp 2 Honey

  • 1 tsp 1 Minced Ginger

  • 1 tsp 1 Pure Sesame Oil

  • Sesame Seeds, Peanuts, Thai Basil and Cilantro for Garnish

Directions

  • To begin, add all ingredients to make your meatballs to a mixing bowl and combine
  • Form meatballs and place them on a parchment lined sheet pan. You can make a smaller meatball which would make about 16. I made larger meatballs because I like a big, juicy meatball😊. Bake in a 400 degree oven for 25 minutes
  • While meatballs are baking, mix all ingredients for your sticky sauce in a sauce pot. Heat over medium heat until it bubbles. Mix your corn starch slurry together and add to your sauce while it’s bubbling vigorously. It should thicken up within seconds. Stir well until you reach the desired thickness and remove from heat. Pour into a mason jar and set aside until needed
  • Once meatballs are done, remove from oven and place in a heated skillet. Pour sticky asian sauce over them and heat until bubbling. You will only need about 1/2 of the sauce. Save the rest in the fridge to use on anything you’d like.
  • To make the broccoli slaw, just slice peppers into thin strips and add them to a bowl with the broccoli slaw mix and the chopped herbs
  • Add all ingredients for the dressing to a jar and shake vigorously to incorporate. Pour some of the dressing over top of the slaw and toss to combine. You will have leftover dressing that you can keep in the fridge for future use. Plate your slaw as the bed for your meatballs
  • Place meatballs on top of slaw and garnish with sesame seeds, and herbs. It’s time to DIVE IN!

Notes

  • Peanuts are a great addition to this dinner that I added AFTER I took the pic..LOL!
  • A second option for adding the sticky sauce to the chicken is to broil it on the meatballs. You have to be careful with that method as there is sugar in the sauce and that can burn quickly if you aren’t paying attention.
  • These meatballs would obvi be amazing with rice or rice noodles as well. Get creative with your sides! Pick your favorites.
