White Wine Braised Greek Lemon Chicken

I love an easy one pot meal! Especially during a busy work week when you want a meal that’s healthy and loaded with flavor but don’t have the energy to put in a ton of effort. I have your answer with my Greek lemon chicken dinner! It’s minimal ingredients, healthy, fresh and fast! What’s not to love about cooking a dinner bathing in wine, garlic and lemon juice, am I right?! I couldn’t believe how juicy the chicken turned out. It paired so well with the kalamata olive and lemon flavors. Pair this meal with a nice greek salad or some green beans to round out the dish!

Ingredients

  • 2 2 Bone in Skin on Chicken Breasts or 4-6 Bone in Skin on Chicken Thighs

  • 1/2 tsp 1/2 Paprika

  • 1/2 tsp 1/2 Garlic Powder

  • 1/2 tsp 1/2 Dried Oregano

  • S&P to taste

  • 2 Tbsp 2 Olive Oil

  • 1 cup 1 Chicken Stock

  • 1/2 cup 1/2 Dry White Wine

  • 1 lb 1 Quartered Gold Potatoes

  • 1/2 cup 1/2 Kalamata Olives

  • 3 3 Cloves Peeled, Whole Garlic

  • A few Sprigs of Fresh Oregano

  • 1 1 Lemon peeled and juiced

Directions

  • To begin, season your chicken with paprika, dried oregano, garlic powder, S&P. Heat your skillet over medium hight heat and add olive oil. Place chicken skin side down and sear for 5 minutes. Flip and sear for 3 more minutes
  • Add wine and chicken stock. Scrape up the brown bits from searing the chicken to ensure you’re getting all the flavors from the chicken during the braising process
  • Add quartered potatoes, kalamata olives, garlic, lemon juice, lemon peels and fresh oregano to skillet
  • Season with additional S&P, cover with lid and place in a 400 degree oven for 30 minutes or until the internal temp reaches 165 degrees

Notes

  • If you can’t find fresh oregano, you can use any type of fresh herb you like. Parsley, dill or thyme would be great substitutions or just some additional dried oregano would work fine as well.
  • The potatoes are sooo amazing in this dish and would be on another level of amazing if you paired them with my whipped feta recipe! Those D to the LISH taters dipped in the whipped feta would be heaven!
  • My recommended wine pairing for this dish is exactly what you are using to cook with. Grab a nice bottle of Sauvignon Blanc or a French Chardonnay! They are both great choices and accompany the dinner and your glass perfectly!
