Mediterranean Chicken Burgers

I have been obsessed with creating low cal meals for Carl and I as we venture into our weight loss journey together. It’s so much fun to come up with new ways to enjoy D to the LISH food that still has all the flavors but with less calories! I have to say, 30 days in and we’re both feeling so much better! Making good decisions for our bodies has certainly been the best thing for both of us! These chicken burgers are loaded with so much flavor. The veggies and herbs combined with the nonfat tzatziki sauce takes these patties to another level! I served them “bunless” as we are watching our carb intake, but you can certainly have a bun with these beauties! They are perfect either way. Add them to your must try list and whip up a greek salad to side them with! WW 1pt per serving.

Ingredients

  • 1 lb 1 98% Fat Free Ground Chicken

  • 1/4 cup 1/4 Reduced Fat Crumbled Feta Cheese

  • 1/3 cup 1/3 Red Bell Pepper Diced

  • 1/3 cup 1/3 Fresh Spinach Chopped

  • 1 Tbsp 1 Fresh Mint Chopped

  • 1 tsp 1 Dried Oregano

  • 1 tsp 1 Kinders “The Blend” Seasoning or your favorite seasoning of choice

  • *For the Tzatziki Sauce*

  • 3/4-1 cup 3/4-1 Non Fat Greek Yogurt

  • 1 1 Lemon Zested & Juice of 1/2 lemon

  • 2 2 Mini Cucumbers Grated and Squeezed

  • 2 2 Cloves Minced Garlic

  • S&P to taste

Directions

  • To start, chop your veggies and herbs. Add everything in a bowl with your ground chicken, feta and spices. Combine everything together and form into 4 patties
  • To make tzatziki sauce, grate your cucumbers on a box grater and squeeze out additional liquid. Add back to bowl and add garlic, yogurt, lemon zest, juice and S&P. Stir well and set aside
  • Spray your skillet with olive oil spray or add 1 Tbsp of olive oil to your pan. Once skillet is heated over medium high heat, add your chicken patties and fry 5-6 minutes per side or until chicken reads 165 degrees
  • Plate chicken patties with tzatziki sauce on top and extra lemon wedges. Enjoy!
