Strawberry Mojito

Taking advantage of ALL THE STRAWBERRIES during strawberry season made me want to whip up this super easy, juicy mojito! I love the combination of sweet strawberries and mint in this yummy cocktail! It’s easy to make and a perfect cocktail to enjoy on a hot summer day by the pool. Have your friends over for a D to the LISH mojito party! Tell them to bring the mint!! You can never have too much mint! 🍃 🍓

Ingredients

  • 2 oz 2 White Rum

  • 1/4 cup 1/4 Sliced Strawberries

  • 8-10 8-10 Mint Leaves

  • 1 oz 1 Simple Syrup

  • 1 1 Lime Freshly Squeezed

  • Club Soda or Sparkling Water to top

Directions

  • To begin, in a high ball glass, add simple syrup, mint leaves, lime juice and strawberries. Muddle to express mint and juices. Add ice to glass, and tequila. Mix well and top with club soda. Garnish with strawberries and mint. ENJOY!

Notes

  • To make simple syrup, add 1/2 cup sugar and 1/2 cup water in a small sauce pot. Bring to hard simmer and when sugar has dissolved, remove from heat and allow to cool. Use in all your favorite bevy’s. Store in fridge for up to 2 weeks.
  • To make this drink a mocktail, omit rum and add additional club soda. It’s so refreshing to have a nice strawberry and mint mocktail in the Summer.
