Roasted Curried Cauliflower with Lemon Tahini Drizzle

Roasted Curried Cauliflower with Lemon Tahini Drizzle

Ingredients

  • 1 1 Head of Cauliflower

  • 2 Tbsp 2 Olive Oil

  • 1 Tbsp + 1 tsp 1 Curry Spice Mix

  • *For the Curry Spice Mix*

  • 1 Tbsp 1 Curry Powder

  • 1/2 Tbsp 1/2 Paprika

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Pepper

  • *For the Tahini Drizzle*

  • 1/3 cup 1/3 Tahini

  • 1/4 cup 1/4 Warm Water

  • 1 1 Large Lemon Zested & the Juice of 1/2 the Lemon

  • 1 1 Clove Minced Garlic

  • S&P to taste

  • Parsley and Extra Lemon Slices for Garnish

Directions

  • To begin, preheat oven to 400 degrees. Cut cauliflower into florets and coat with olive oil and curry spice mix. Roast for 20 minutes, on a parchment lined sheet pan tossing halfway through
  • While cauliflower is roasting, mix your tahini drizzle together by adding all ingredients in small bowl. Whisk thoroughly until everything comes together and creates a smooth sauce to drizzle
  • Remove cauliflower from oven and top with tahini drizzle, chopped parsley and extra lemon slices. Enjoy!

Notes

  • If your lemon is small, juice the entire lemon in your drizzle.
  • My head of cauliflower was on the larger side so that’s why I needed a little more than a Tbsp to coat on my cauliflower. If you have a smaller head of cauliflower, you may only need a Tbsp.
  • You will have spice mix leftover. You can save it for the next time you make this D to the LISH creation or use it for anything else you want😊
