Strawberry Fields Salad with Blush Wine Vinaigrette & Spicy Candied Walnuts

It’s strawberry season! There is nothing I love more than a refreshing, Summertime salad and this has to be my FAVORITE one!! The sweet strawberries with the subtle tartness of the blush wine vinaigrette is PERFECTION along with the sweet and slightly spicy walnuts. I could eat bowl after bowl of this salad! I first made this salad for a dinner party we hosted last Summer and it was my favorite thing I served! Yes! It even topped the Filet Mignon! šŸ˜‚ You can use any type of crumbled cheese with this salad. I’ve tested them all. The goat cheese is my favorite and pairs so lovely with the rest of the flavors in this salad! Add this recipe to your summertime salad rotation and ENJOY!!

Ingredients

  • *For the Candied Walnuts*

  • 1 cup 1 Walnuts

  • 1/4 cup 1/4 Maple Syrup

  • 1 1/2 Tbsp 1 1/2 Butter

  • 1/2 tsp 1/2 Vanilla

  • 1 tsp 1 Cinnamon

  • 1/4 tsp 1/4 All Spice

  • 1/8 tsp 1/8 Cayenne

  • *For the Blush Wine Vinaigrette*

  • 1/2 cup 1/2 Canola Oil

  • 1/4 cup 1/4 Red Wine Vinegar

  • 2 Tbsp 2 Granulated Sugar

  • 1 1 Small Lemon Freshly Squeezed

  • 1 1 Clove Garlic Grated

  • S&P to Taste

  • *For the Salad*

  • 1 lb 1 Mixed Greens

  • 1/2 cup 1/2 Strawberries Sliced

  • 1/4 cup 1/4 Candied Walnuts

  • 1/4 cup 1/4 Crumbled Goat Cheese

  • 1/4 cup 1/4 Red Onion Sliced or Diced

Directions

  • To begin, chop down walnuts in half being careful not to chop them too small. Mix spices together and heat a skillet over medium/low heat. Add butter and once starting to melt, add maple syrup, vanilla and spices. Whisk continuously to incorporate together. Add walnuts and stir continuously for 3-5 minutes until all the candied mixture has coated the walnuts. Be careful not to burn. Remove from heat and spread walnuts on a parchment lined baking sheet to cool
  • To make dressing, grate garlic in a mason jar and add remaining ingredients. Shake well to emulsify. Set aside
  • To build salad, add mixed greens to serving bowl and drizzle a few tablespoons of vinaigrette on them. Massage into greens and top with remaining ingredients. ENJOY!

Notes

  • There are a couple steps in this salad that increase the time it takes to enjoy. If you wanted to make this salad even easier to prepare, my suggestion is to purchase candied walnuts or pecans already made and the only store bought dressing I can recommend that is absolutely D to the LISH is Briannas Home Style Blush Wine Vinaigrette. It’s THE BEST! It is in fact, the inspiration for my blush wine vinaigrette creation.
  • If you wanted to serve this salad in individual portions for a dinner party, just build greens on your salad plates and massage dressing into the greens. Place remaining ingredients onto each plate and serve with additional blush wine vinaigrette on the table.
