Pork Milanese

This is such an easy and flavor packed dish! I like to pair this with my favorite lemon cacio e pepe dish but you can pair this with anything you want! I think some mashed potatoes and sautéed green beans would be a perfect side to this cheesy, crispy main dish! I made a parmesan, lemon arugula salad to top these beauties which was a perfect accompaniment to the richness of the pork! This is such an easy dinner to throw together as it only takes about 5-6 minutes to fry these fellas up! It’s a perfect dinner to enjoy on a busy work night but it also would make a superb weekend dinner party main dish! The choice is yours to decide when you want to DIVE INTO this D to the LISH dish!

Ingredients

  • 1 1 Pork Tenderloin

  • 1 cup 1 Panko Bread Crumbs

  • 1/2 cup 1/2 Grated Parmesan Cheese

  • 1 tsp 1 Italian Seasoning

  • 1/2 cup 1/2 Flour for dredging

  • 2 2 Eggs

  • 1/4-1/3 cup 1/4-1/3 Canola Oil

  • S&P to taste

Directions

  • To begin, slice pork tenderloin into medallions and place them in a ziplock bag. Pound them to flat then season with salt and pepper
  • In 3 flat pasta style bowls, add flour to one, beaten eggs to the middle and the panko, parmensan and italian seasoning mixture to the third bowl
  • Heat oil in skillet and dip pork in flour, followed by egg and then the panko/parm mixture. Place in hot skillet away from you and fry 3 minutes per side
  • Remove and serve with some fresh squeezed lemon and shaved parmesan
