Spicy Pineapple Martini

This is my new favorite bevy of the Summer! I love a good spicy cocktail and this delivers a nice subtle heat. It’s not too spicy and pairs so well with the sweetness of the pineapple. I made a yummy jalapeño mint simple syrup that adds so much to this drink. Keeping simple syrups in your fridge is such a nice treat and this one is a great option because it would work in so many cocktails! This is a super easy, 3 ingredient martini that you can shake up all summer long! Enjoy!

Spicy Pineapple Martini

Ingredients

  • *For the Simple Syrup*

  • 1 cup 1 Sugar

  • 1 cup 1 Water

  • 4 4 Jalapeños

  • 1/4 cup 1/4 Mint

  • *For the Martini*

  • 1.5 oz 1.5 Vodka

  • 2 oz 2 Pineapple Juice

  • 1/2 oz 1/2 Spicy Simple Syrup

Directions

  • To begin, slice jalapeños and add mint, jalapeños , sugar and water to a small sauce pot. Simmer for 5 minutes on the stove until the sugar has dissolved. Remove from heat and steep for 30 minutes to infuse the jalapeños and mint
  • In a cocktail shaker with ice add vodka, pineapple juice and simple syrup. Shake well and strain into a martini glass. Garnish with jalapeño and mint. ENJOY!

Notes

  • To make this drink a mocktail, omit the vodka and add additional pineapple juice. Top with pineapple sparkling water for a little kick!
  • If you want this cocktail more spicy, muddle a couple jalapeño slices in the bottom of your cocktail shaker before you add your ice.
