Ingredients

  • 1 1 Head of Napa Cabbage

  • 2-3 2-3 Carrots Grated

  • 1/4-1/3 cup 1/4-1/3 Cilantro Roughly Chopped

  • 3 3 Green Onions Thinly Sliced

  • 1/3 cup 1/3 Peanuts Roughly Chopped

  • *For the Dressing*

  • 1/4 cup 1/4 Rice Wine Vinegar

  • 3 Tbsp 3 Creamy Peanut Butter

  • 2 Tbsp 2 Soy Sauce

  • 2 Tbsp 2 Honey

  • 1 tsp 1 Minced Ginger

  • 1 tsp 1 Pure Sesame Oil

Directions

  • To begin, add all ingredients for dressing in a mason jar and shake well to emulsify. Set aside
  • Wash and slice your cabbage, peel and grate your carrots, slice your green onions and chop your cilantro and peanuts
  • Add all ingredients to salad bowl and top with dressing. Toss together and serve

      Hi Cathy,

      I would recommend making the salad ahead of time and also the dressing, but don’t combine them until you are ready to serve to preserve the freshness of the salad. Hope you give this one a try. You will have dressing left over to use for more things! I love this one.
