Blueberry Mint Lemon Spritzer

This mocktail is the perfect refresher on a hot summer day when you want something tart and fruity to sip on while enjoying the sunshine. I love the addition of the mint infused simple syrup! It adds the perfect balance of fresh and sweet. Make a pitcher of this goodness and have your friends over to enjoy a glass on the patio with you!

Ingredients

  • 1 oz 1 Mint Infused Simple Syrup (See notes)

  • 1/4 cup 1/4 Blueberries

  • 3-4 3-4 Mint Leaves

  • 1 1 Small Lemon Freshly Squeezed

  • Top with Lemon Soda

Directions

  • In a cocktail shaker or glass, muddle together simple syrup, mint leaves, blueberries and lemon juice
  • Strain into cocktail glass and add ice
  • Top with lemon soda and stir to combine
  • Garnish with twist of lemon, mint leaves and blueberries. ENJOY!

Notes

  • To make mint infused simple syrup, add 1 cup water with 1 cup sugar in a small sauce pot. Add a handful of mint leaves and simmer for 5 minutes until sugar dissolves. Remove from heat and steep for 30 minutes to infuse the syrup. Remove mint leaves, place in mason jar and store in your refrigerator for up to 2 weeks to use in your cocktails and mocktails.
  • To make this a cocktail, add 1.5 oz of Gin or Vodka.
  • If you can’t locate lemon sparkling soda, you can sub lemon flavored sparkling water.
