Southwest Salmon Burgers with Cilantro Aioli

Salmon is such a versatile fish! I love all the things we can do with it. These salmon burgers are so yummy with the southwest flavors and the pairing of the cilantro aioli and the mango pico. Every bite I took, I was Mmmmm’ing OUT LOUD! LOL 😂 The aioli really takes these burgers over the top! Don’t skip that step. The best part is, you’ll have leftovers for more sandwiches. Southwest Salmon Burgers with Cilantro Aioli

Ingredients

  • 1 lb 1 Salmon, skin removed

  • 1/2 cup 1/2 Bread Crumb

  • 1/2 cup 1/2 Thinly Sliced Scallions

  • 1/4 cup 1/4 Small Diced Red Pepper

  • 1 1 Egg

  • 1 Tbsp 1 Chopped Cilantro

  • 1 Tbsp 1 Olive Oil

  • 2 tsp 2 Southwest Salmon Seasoning(See Notes)

  • 1/2 cup 1/2 Mayonnaise

  • 3 Tbsp 3 Cilantro Vinaigrette (See Notes)

  • 4 4 Brioche Buns

  • 1/2 1/2 Large Avocado Diced

  • Mango Pico de Gallo

Directions

  • To begin, cube and chop Salmon and mix together bread crumb, egg, scallions, red pepper, cilantro, olive oil and the southwest salmon seasoning. Form into 4 patties
  • Add 3-4 Tbsp olive oil to your skillet and ensure oil covers the entire bottom of the pan. Once oil is hot, add salmon patties and pan fry for 4-5 minutes per side.
  • Mix mayonnaise with cilantro vinaigrette to make aioli and spread on the bottom of your brioche buns.
  • Place salmon on bun and top with mango pico and diced avocado

Notes

  • To make cilantro vinaigrette, in a high powered blender, add 2 cups cilantro, 1/2 cup olive oil, 2 Tbsp red wine vinegar, 2 green onions, 1 clove garlic, 1 tsp salt and 1/2 tsp red pepper flake. Blend until smooth. Store in refrigerator for up to 5 days.
  • To make southwest seasoning, blend together 1 Tbsp chili powder, 1 Tbsp brown sugar, 1/2 Tbsp cumin, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/2 tsp cayenne and pepper to taste. You will have leftover of this seasoning but it goes well with so many other things!
  • I use store bought fresh mango pico for this sandwich. You can make it yourself, but I find that by the time all ingredients are purchased to make the pico, it’s less expensive to purchase the store made fresh pico. If you can only find regular pico, you can purchase mango separately. Dice it up and add to the pico. Super easy and D to the LISH!
