Chipotle Turkey Skillet Chili

I have been a busy little bee developing recipes for the past few years. Because of that, I am always whipping up something new in the kitchen and don’t take much time to revisit previous creations. But, when it comes to this one, that is not the case. I have made and re made this easy one pot dinner countless times since I developed it. Why? Because it’s easy, loaded with so much flavor and it’s super healthy! I love this on a busy weeknight when I don’t feel like cooking but I want a tasty meal! This is a MUST TRY! Chipotle Turkey Skillet Chili

Ingredients

  • 1 lb 1 Ground Turkey

  • 2-3 2-3 Sweet Potatoes

  • 1 1 Yellow Onion

  • 15 oz 15 Northern Beans

  • 15 oz 15 Diced Tomatoes

  • 2-3 cups 2-3 Chicken Stock

  • 2-3 cloves 2-3 Minced Garlic

  • 2 2 Chipotle Peppers in Adobo

  • 1 Tbsp 1 Adobo sauce from canned chipotle peppers

  • 1 Tbsp 1 Chili Powder

  • 1/2 Tbsp 1/2 Cumin

  • 1/2 Tbsp 1/2 Spanish Paprika

  • 1-2 tsp 1-2 Oregano

  • 1 1 Lime

  • S&P to taste

Directions

  • In a skillet, heat olive oil. Saute diced onion until translucent
  • Add chopped chipotle peppers, adobo sauce and garlic. Stir to combine
  • Add ground turkey and brown
  • Add chili powder, paprika, cumin, oregano and S&P. Allow spices to combine with meat for a minute
  • Add diced tomatoes, bean and cubed sweet potatoes. Stir to combine and saute for a couple minutes
  • Add stock and bring mixture to a boil. Turn heat to medium/low, cover and simmer for 15-20 minutes until sweet potatoes are fork tender.
  • Remove lid and squeeze in the juice of your lime. Ladle in bowls and enjoy this D to the LISH chili!
