Figgy Flatbread Pizza

I love a good flatbread! It was my favorite happy hour order when I used to travel for work! There are so many creative things you can do with flatbread and it’s a perfect one to two person meal! It can play as the main dish, an appetizer, or make it a family dinner where everyone gets to build their own creation! How fun is that?! Naan takes center stage here as the canvas for this creation with some dried figs and fig butter adding the sweet side with crispy prosciutto and some red pepper rounding out the savory. These pizzas bake up super quick so you can have dinner on the table in no time. It’s the perfect mid week D to the LISH dinner option for those busy nights when you just don’t have the time for anything more than a quick 10 minute option!

Ingredients

  • *For the Pizza*

  • 1 1 Naan or Flatbread

  • 2 Tbsp 2 Fig Jam or Fig Butter

  • 1/4 tsp 1/4 Red Pepper

  • 1/2 cup 1/2 Shredded Mozzarella Cheese

  • 3-4 3-4 Dried or Fresh Figs

  • 1 1 Piece Prosciutto

  • 1/2-1 cup 1/2-1 Arugula

  • 1 Tbsp 1 Blue Cheese Crumbles or Goat Cheese

  • *For the Dressing*

  • 1/4 cup 1/4 Olive Oil

  • 2 Tbsp 2 Fig Jam or Fig Butter

  • 2 Tbsp 2 Balsamic Vinegar

  • 1 1 Garlic Clove Grated

  • S&P to taste

Directions

  • To begin, boil 1-2 cups of water on the stove top and pour boiling water over your figs. Cover with a towel or lid and allow to steep for 10-15 minutes to let the figs plump. If using fresh figs, skip this step
  • To prepare your flatbread, brush on fig jam or fig butter then sprinkle some red pepper for some heat. Skip this step if you don’t want heat. Sprinkle mozzarella cheese on followed by figs sliced in half and torn prosciutto. Bake in a 450 degree oven for 9-10 minutes
  • While pizza is baking, prepare dressing by adding all ingredients for dressing and whisking together to incorporate. Spoon a couple tablespoons onto arugula and using your hands, massage into greens. Set aside to dress your pizza with when it comes out of the oven
  • Remove pizza, top with arugula and blue cheese crumbles
  • Slice and DIVE IN!!

  • I love using Naan for these quick and easy pizzas! It bakes to perfection. Grab a pack to have on hand for these mid week pizza nights!
  • If you can’t find prosciutto, bacon would work just as well on this pizza.
