Instant Pot Chicken Cordon Bleu Casserole

This is the perfect dinner to feed a crowd and I promise, everyone will love it! I’m a fan of easy, yummy dinners that take little effort. This dinner would be perfect on a busy weeknight, or it doubles as a special occasion dinner to make for that special one in your life! Serve it with a nice green salad and your favorite glass of wine!

Instant Pot Chicken Cordon Bleu Casserole

Ingredients

  • 1 Tbsp 1 Olive Oil

  • 1 lb 1 Boneless, Skinless Chicken Breast

  • 8 oz 8 Cubed Ham

  • 4-5 cups 4-5 Chicken Stock

  • 1 tsp 1 Garlic Powder

  • 1 1 Parmesan Rind

  • 12-16 oz 12-16 Rotini

  • 6-8 oz 6-8 Cream Cheese

  • 6-8 oz 6-8 Swiss/Gruyere Shredded Cheese

  • 1/4 cup 1/4 Grated Parmesan Cheese

  • 1/2 cup 1/2 Panko Bread Crumbs

  • 1 Tbsp 1 Butter

  • 1/2 tsp 1/2 Dried Parsley

  • S&P to taste

Directions

  • Set Instant Pot to saute and add olive oil. Cube chicken and add to Instant Pot. Season with Salt and Pepper and brown.
  • Add cubed ham and stir to combine
  • Add rotini noodles and combine.
  • Add chicken stock, parmesan rind and garlic powder. Stir all together ensuring noodles are in the stock
  • Place lid on and set pressure to 5 minutes. Once complete, quick pressure release, remove lid and stir. Add cheeses and stir to combine
  • In a small saute pan, add butter and bread crumbs. Toast until lightly browned. Add dried parsley. Remove from heat
  • Place cordon bleu in casserole dish and top with grated parmesan and toasted bread crumbs.
  • Serve with a salad and your favorite glass of wine!

Notes

  • The parmesan rind gives this dinner a nice depth of flavor! It is ok if you omit this step. It will still be super D to the LISH!
