Creamy Lemon and Spinach Orzo

I developed this side dish as a pairing for my Chicken Gyro bowls but it can be served with anything! This has everything you want in a side dish! It’s flavorful, healthy(spinach), and so incredibly easy to throw together! I love the extra depth of flavor that the toasted orzo adds to this dish! It only takes about 15 minutes start to finish and the end result will have you adding it to your “I must make this again” list!

Creamy Lemon and Spinach Orzo

Ingredients

  • 1 cup 1 Orzo

  • 2 Tbsp 2 Butter

  • 2 cups 2 Chicken Stock

  • 1/4 cup 1/4 Parmesan Cheese

  • 1/4 cup 1/4 Heavy Cream

  • 1 1 Small Lemon

  • 5 oz 5 Fresh Spinach

Directions

  • In a skillet, melt butter and add orzo. Toast orzo until it starts to brown, then add chicken stock and fresh squeezed lemon juice
  • Bring chicken stock to low boil, turn burner to medium/low, cover and simmer for 10 minutes
  • Remove lid, add parmesan and heavy cream. Stir to incorporate
  • Add spinach and stir in. Place lid on to help spinach wilt in.
  • Serve as a side to whatever your heart desires and ENJOY!
