Poblano Creamed Corn & Tater Chowda

I have the most comforting bowl of goodness that is sooo easy to throw together! I created this quick and easy chowder to pair next to rich crab cake bites which makes for a great summertime lunch or dinner idea! I use pantry staples which makes this dish super easy to make. Pair this chowder with a nice green salad, chilled white wine and your favorite people! Enjoy!

Ingredients

  • 5 5 Strips of Bacon

  • 1 1 Yellow Onion, Diced

  • 2 2 Cloves of Garlic, Minced

  • 2 2 Poblanos, Diced

  • 3 3 Large Russet Potatoes, Cubed

  • 4-6 cups 4-6 Chicken Stock

  • 2 cans 2 Creamed Corn

  • 12 oz 12 Frozen Corn

  • S&P to Taste

Directions

  • To begin, cut bacon into 1″ pieces and drop in a large dutch oven or stock pot. Sauté bacon until the fat renders, then add diced onion and poblano’s
  • Sauté bacon with veggies until the veggies are translucent, then add garlic. Sauté until garlic begins to release flavor, about a minute
  • Add cubed potatoes, stock and corn. Boil until potatoes are fork tender. Season with S&P to taste
  • To make a thicker chowder, place 1-2 cups of cooked chowder in a blender and blend until smooth. Add back to the chowder and stir well to thicken
