Biscoff S’mores Chocolate Chunk Cookies

I’m going to start off by saying these cookies are dangerous! Whew! They are loaded with all my favorite things! Chocolate chunks, milk chocolate chips, marshmallows and crispy, Biscoff cookies. It’s a cookie within a cookie! If you love a s’more in the summertime, you need to add these cookies to your list to try! They are crispy on the outside and chewy on the inside. The most perfect cookie to share with your friends and family. This will be a favorite all around! Carl gives this recipe two thumbs up! They may be his favorite cookies I’ve ever made. Biscoff S’mores Chocolate Chunk Cookies

Ingredients

  • 2 1/2 cups 2 1/2 All Purpose Flour

  • 1 Tbsp 1 Cornstarch

  • 1 tsp 1 Cinnamon

  • 1 tsp 1 Salt

  • 1 tsp 1 Baking Soda

  • 1/2 tsp 1/2 Baking Powder

  • 1/2 tsp 1/2 Cocoa Powder

  • 1/2 cup 1/2 Biscoff Cookie Butter Spread

  • 1 cup 1 Brown Sugar

  • 1/2 cup 1/2 Granulated Sugar

  • 2 2 Eggs

  • 2 tsp 2 Vanilla

  • 3/4 cup 3/4 Butter, Cold and Cubed

  • 1 cup 1 Milk Chocolate Chips

  • 1 cup 1 Semi Sweet Chocolate Chunks

  • 1 – 1 1/2 cups 1 – 1 1/2 Mini Marshmallows

  • Biscoff Cookies and Hershey Bars for Topping

Directions

  • To begin, mix all dry ingredients together in a large bowl. Flour, cornstarch, cinnamon, salt, baking soda, baking powder and cocoa powder
  • In a large mixing bowl, add biscoff spread, sugars, eggs and vanilla. Mix well. Mix in cubed butter and blend just until incorporated
  • Add dry ingredients to wet ingredients and mix just until it’s combined. Fold in your chocolate and marshmallows
  • Using a large cookie scoop, scoop dough onto cookie sheet and place in your freezer for 30-60 minutes to chill dough before baking
  • Preheat oven to 375. Bake cookies for 10-12 minutes. Remove from oven and top with broken Biscoff cookies and Hershey bars. Allow to cool directly on the cookie sheets for 10 minutes to allow the cookies to set up before moving to cooling racks. Enjoy immediately with a glass of milk, once cooled!

Notes

  • I recommend chilling the dough, but you can bake them immediately if you don’t have time to chill.
