Blue Cheese Stuffed Olives

My favorite martinis are those filled with blue cheese stuffed olives! I wanted to make homemade stuffed olives to serve with a do it yourself steakhouse martini bar and they did not disappoint! I started with Roquefort blue cheese and blended it with a little cream cheese and piped it into olives. I then marinated the olives with a splash of olive oil, red pepper, lemon zest and minced rosemary. They are rich and D to the LISH paired with the perfect dirty martini or eaten by themselves! Enjoy!

Blue Cheese Stuffed Olives

Ingredients

  • 8 oz 8 Castelvetrano Olives, Pitted

  • 2 oz 2 Roquefort Blue Cheese

  • 1 oz 1 Cream Cheese

  • 1 Tbsp 1 Milk or Cream

  • 2 Tbsp 2 Olive Oil

  • 1 Tbsp 1 Minced Rosemary

  • 1 1 Lemon Zested

  • Pinch of Red Pepper

Directions

  • To begin, remove olives from brine and dry on paper towel, reserve brine for martini bar if making martinis
  • In a blender, blend together blue cheese, cream cheese and cream until just blended
  • Add blue cheese cream to a piping bag and snip the tip. Pipe the blue cheese cream in the olives and place in a small mixing bowl
  • Add olive oil, lemon zest, rosemary and red pepper. Gently toss everything together and place olives in a serving bowl for your guests
