Ritz Cracker Crusted Creamed Corn Casserole

I have the side dish of all side dishes to put on your tables for Thanksgiving this year! When I was a kid, the only creamed corn I knew about was from the can. Even though I love corn, I was never a fan of that. I created this ultimate creamed corn dish that puts the can to shame! The sweetness of the corn paired with the white cheddar and cream is on another level of D to the LISH! Topping it with buttery, ritz cracker crumbs takes this dish to perfection! If you want to raise the bar even more, drizzle some hot honey on top! Your guests will definitely be requesting the recipe! Enjoy!

Ingredients

  • 36 oz 36 Frozen Sweet Corn, (3 Bags)

  • 4 oz 4 Cream Cheese

  • 1 cup 1 Heavy Cream

  • 1 1/2 cups 1 1/2 White Cheddar Cheese

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Garlic Powder

  • *For the Cracker Topping*

  • 1 1 Sleeve Ritz Crackers Crushed

  • 4 Tbsp 4 Melted Butter

  • 1/4 cup 1/4 Parmesan Cheese

Directions

  • To begin, preheat oven to 350.
  • Grate white cheddar cheese and set aside. In a small saucepot, add heavy cream, cream cheese, garlic powder and salt. Stir well. Once everything is incorporated, add white cheddar cheese and stir until melted
  • Heat up corn in microwave just until thawed. About 4 minutes
  • Add corn and cheese mixture to a 10 inch baking dish
  • Crush ritz crackers and add melted butter to cracker crumbs. Stir well. Grate parm cheese and toss in the buttery bread crumbs. Top on the casserole and bake for 30 minutes until bubbly. Top with Chives and Enjoy!

Notes

  • I like to bake and serve this casserole in mini casserole dishes which you can also do. You can also use a cast iron skillet to bake and serve this casserole in.
