Cinnamon Vanilla Buttermilk Pancakes

I could make pancakes every day in this house and Carl would be so content. Pancakes are his favorite food. We usually have a box of Hungry Jack in the pantry, which we love by the way. However, I wanted to test my own homemade version of buttermilk pancakes. I’m very picky when it comes to pancakes. I don’t like heavy, dense or flat pancakes. I like a light, fluffy pancake with lots of flavor. It took me a few attempts to get this recipe just the way I wanted it. The addition of the cinnamon and vanilla is chefs kiss! These pancakes are light and fluffy with just the right amount of sweetness. Serve them with a pat of butter and some maple syrup with a side of sausage for the perfect breakfast.

Ingredients

  • 2 cups 2 All Purpose Flour

  • 1/4 cup 1/4 Sugar

  • 2 tsp 2 Baking Powder

  • 1 tsp 1 Baking Soda

  • 1 tsp 1 Salt

  • 1 tsp 1 Cinnamon

  • 2 tsp 2 Vanilla

  • 2 2 Large Eggs

  • 3 Tbsp 3 Butter Melted

  • 2 1/2 cups 2 1/2 Low Fat Buttermilk

Directions

  • To begin, preheat griddle pan or skillet over medium/low heat
  • Add dry ingredients to large mixing bowl. Whisk well
  • Adding a well in the center, add buttermilk, vanilla, eggs and melted butter. Stir until incorporated, leaving some lumps is ok.
  • Measure out your batter using a large cookie scoop. Pour into your skillet or griddle. Once bubbles form on the first side, using a spatula, flip your cakes and cook until browned on both sides and center is cooked through. This recipes makes about 10-12 pancakes depending on the size
