Just For You Fruit Crisp

Have you ever been in the mood for dessert, but don’t want to go through the trouble of making something that you really don’t want leftovers of? Well, it’s your lucky day, because I have the perfect treat for you! Meet my individual, mini fruit crisps! I had some blueberries and peaches in my fridge that needed a job and I thought this was the best idea to use them up. All you need is a 1/2 cup of the fruit of your choice along with some staples from your pantry and 25 minutes in your oven to the most D to the LISH bubbling ramekin of goodness! Top with a scoop of ice cream and DIVE IN!

Ingredients

  • *For the Fruit Base*

  • 1/2 cup 1/2 Diced Fruit of Choice

  • 1 Tbsp 1 Granulated Sugar

  • 1/2 Tbsp 1/2 Corn Starch or Arrowroot Starch

  • *For the Crisp Topping*

  • 3 Tbsp 3 Rolled Oats

  • 2 Tbsp 2 All Purpose Flour

  • 1 Tbsp 1 Granulated Sugar

  • 1 Tbsp 1 Brown Sugar

  • 1/4 tsp 1/4 Cinnamon

  • 2 Tbsp 2 Cold Butter, Grated or Diced Small

Directions

  • To begin, preheat oven to 350. Dice your fruit and place in an 8 oz. ramekin with sugar and corn starch. Stir well
  • Add all ingredients for crisp topping to a small bowl. Using your fingers, mix your grated butter through the topping and place topping on your fruit base
  • Place your ramekin on a small sheet tray and bake in your oven for 25 minutes, until mixture is bubbling
  • Top with a scoop of ice cream and enjoy!

Notes

  • These are perfect for just you or if you wanted to entertain and give your guests their own individual ramekin for dessert, you can definitely do that also! I’ve set the recipe up for you to adjust the serving size if you wanted to make more than 1 at a time.
  • Any fruit would work great for this recipe! Have an apple laying around? Dice it up! Strawberries needing to be used up? Throw them in! I used peaches and blueberries, but cherries would be another great option! The choice is yours!
