Southwestern Salad with Honey Lime Vinaigrette

I had an idea to create this super easy and refreshing salad with ingredients I already had in my fridge and pantry and it did not disappoint! A simple can of corn along with an avocado, tomatoes, cotija cheese and a few other add ins for flavor and crunch is all this salad needed to be the star of the table! Tossed with my easy honey lime vinaigrette and this bowl of salad was a winner! It’s the perfect salad for your picnics this summer as it goes with everything. Toss some grilled chicken in for a complete meal!

Ingredients

  • 10 oz 10 Mixed Greens

  • 1/2 cup 1/2 Canned Sweet Corn or Fresh Corn off the Cob

  • 1 1 Avocado, Cubed or Sliced

  • 1/2 cup 1/2 Cherry Tomatoes

  • 1 1 Bunch Green Onions, Sliced

  • 1/4 cup 1/4 Chopped Cilantro

  • Sprinkle of Cotija Cheese

  • Top with Tri Colored Tortilla Strips

  • *For the Vinaigrette*

  • 1/3 cup 1/3 Avocado Oil

  • 1 1 Lime, Freshly Squeezed

  • 1/2 Tbsp 1/2 Honey

  • S&P to Taste

Directions

  • To begin, add all ingredients for the vinaigrette to a mason jar. Place lid on and shake vigorously to emulsify the dressing. Taste and adjust to your liking
  • In a large salad bowl, add mixed greens and toss with dressing
  • Add remaining ingredients to salad and toss
  • You can serve this salad in a large bowl or plate it up individually
