Smoked S’mores Biscoff Skillet Cookie

Surprise! I have a special recipe to celebrate my favorite holiday and the 4th of July weekend! I can promise you that this will be in my regular recipe rotation for the foreseeable future! Holy WOWZA! Think S’mores on steroids! This cookie skillet is loaded with all the things you love in a s’more, but instead of a regular graham cracker, I elevated it with Biscoff cookies! Every time I eat a Biscoff cookie, I think it tastes like an upscale graham, so I thought how cool it would be to add them in this skillet! I packed it with marshmallows and Hershey bars. Let me tell ya, it DID NOT disappoint! I smoked it on our pellet grill and it turned out perfect! Make this for your 4th of July celebrations and don’t forget your dollop of ice cream to complete the perfect bite! Enjoy and Happy 4th of July!

Ingredients

  • 1/2 cup 1/2 Melted Butter

  • 1 1 Egg

  • 1 tsp 1 Vanilla

  • 1/3 cup 1/3 Light Brown Sugar

  • 1/4 cup 1/4 Granulated Sugar

  • 1 cup 1 All Purpose Flour

  • 1/2 tsp 1/2 Salt

  • 1/4 tsp 1/4 Baking Soda

  • 1/4 tsp 1/4 Baking Powder

  • 1/2 tsp 1/2 Cocoa Powder

  • 1/2 cup 1/2 Milk Chocolate Chips

  • 1 1/2 1 1/2 Hershey’s Milk Chocolate Candy Bars

  • 1/2-1 cup 1/2-1 Mini Marshmallows

  • 4 4 Biscoff Cookies

Directions

  • To begin, preheat your oven or pellet grill to 375. In a large bowl, add your melted butter, egg and vanilla. Whisk to combine. Add sugars and whisk well to incorporate
  • Add flour, salt, baking powder, baking soda and cocoa powder together in a mixing bowl. Whisk well and add to wet ingredients
  • Using a knife, chop your Hershey candy bars and Biscoff cookies into smaller pieces. Add your chocolate chips, candy bar and cookie pieces along with your mini marshmallows to the bowl and stir well
  • Spray an 8-9″ skillet or brownie pan if you don’t have a skillet, and add your cookie dough. Bake for 15 minutes until just set. Remove and allow to cool for a few minutes. Serve with ice cream and enjoy!
